LOL! I'm cheap, but not THAT cheap.

I mean 20, 000 street and track miles.

I will only do three to four track days.

A 520 on a VFR will considerably reduce life of the chain compared to 530, so actual $$ savings are doubtful, and you will NOT notice the difference in weight.

another factor to consider is whether you can obtain a steel rear sprocket for the VFR in 520 size.

(aluminum sprockets are crap and wear out very quickly!)

Mmm gee I've been all over this one, and ended up having a RK GB530XSOZ1 the previous RK was of another build and we found out later the pins dried up why? we haven't a clue. But RK took care of me with this new one, it's looks and feels like the right one, I'd stay OEM on sprockets too unless this is a track bike, You won't notice the difference. Even then it's questionable it's not about if the 520 can handle the power, a friend here with a GSXR1000 runs a 520 with no trouble but again it's more a track bike, he also has shaved like another 20+ lbs of the bike by subtracting parts so with a 520 in the mix with other goodies you do start to lose weight. The VFR is more like we all ready know a good blend of a sport bike with long legs, one of the things that makes it so is the 530 chain. There's like less than 6 oz. difference in weight with the chain, not sure what you save in the sprockets, but it's probably not much.
