I know of two 5th gens and one 6th gen on here that are north of 100k and still running strong!! I have no doubt there are others...
As was said check battery voltage idling and at a few rev ranges. If voltage is too low to the plugs you get weak spark. How old is the battery?...
Did it run the same with the old spark plugs? Did you lift the fuel tank when you changed the plugs? If so make sure all the vacuum hoses are...
How many miles since you add Seafoam? And as Pliskin said "Is it rough only at idle, or across the RPM range?"

Welcome to the world!!! Yes a 2000 had cats and o2's. The previous owner may have installed a '98 exhaust system...several guys on have have done it.
