The first set of replacment tires I bought for my 6th gen. were Conti Road Attacks. Really liked them, and fairly sticky for a sport-touring tire...

Yes, with the stock or Pazzo hand levers, you can start the bike with the clutch lever held in and the bike in gear. Not recommended by the MSF...

I've never had a shield fly open on its own on the 2 HJCs I own, with or without the shield lock (which I never use) even when my head is turned.
I used to use Fram filters when I started doing my own oil changes, but never touch them now. I always get something at least mid-grade.
Looks great! You'll love the bags. I bought mine a couple years ago but just mounted this up this summer. Now I can't imagine not having them!...
