I have changed my pads but the calliper won't slide back to allow the inner pad to slide in. I know it's not the pistons as they slide all the way back in. Does anyone know the trick to freeing off the sliding part to allow it to accommodate the new wider pads?

Could be a misplaced pad retaining spring--those brassy-lookin wierd-shaped ones that can easily be installed wrong or missing entirely !
