How much adjustment is possible on the position of the gear shifter? I find that I really have to stretch my ankle to shift up, and pick my foot right up to shift down. How far can I move the assembly round before I run into problems?

Looks to me like you have two choices.

You can move up or down one or two teeth and adjust the linkage rod.

You can shorten the shifter. Your foot would need to move less, but the contact position changes and the force required to shift increases. Looks like the VF500 has a pretty long shifter lever, so I would get a spare and monkey with the length.
