Has anyone done this already? Is it possible even? I know my bike has four lugs, newer wheel has five, is the offset close? Is it worth looking into?

There's a thread around somewhere (either here or over at VFR Discussion) where guys are swapping in a Ducati 848 Evo rear wheel (a very nice, very light, forged Marzocchi rear). If they can pull that off I'd bet they could help you with your question.
