On past 3 rides, when riding - few minutes after starting to ride, engine died and bike started slowing down to a full stop over 50 meters distance. I could not even roll it in Neutral. To solve the problem and start riding, I had to turn the ignition off, and wait several seconds. The bike could roll in Neutral without me doing anything and I could start riding again.
I noticed the clutch reservoir was very low and I had start gear issues, so I topped up the brake fluid and the clutch operation is smooth, the bike is riding just fine in all other circumstances.

What could be causing bike stopping like this mid-ride?

I noticed perhaps unrelated issue that when riding speed dial would drop to zero, and then keep rising when throttle was open.

Please define "engine died". Like just stopped running instantly, or sputtered and then died or did you lose electrical power.

Neutral is a purely mechanical state. You are either not really finding neutral, or you have 2 (or more) unrelated issues that are very coincidental.

Also, please define "speed dial". I think you mean the Tachometer?

And does this continue to repeat itself over and over during the course of the ride or is it once at the start?

    Bizarre.

Bleed your clutch just in case. Check your charging system and battery (and power connections at the solenoid).

Might as well flick a light switch 3 times and dance a jig too, cuz that is a weird description of problems.

    Hi Captain 80s.
The engine did not sputter, it felt like it lost electrical power - as I don't recall whether it was still firing. When the bike came to stop I know I was in Neutral as the Neutral light indicator was on, yet I could not roll the bike. After 15 seconds wait, ignition back on and then could roll bike again, and then continue as normal.
As speed dial I meant Speedometer.
It happened once per ride. On first 2 rides it started within 1km from starting. On 3rd ride I let the bike idle for 5 min before riding, and issue did not occur for first 30 km. I then stopped for about 5-10 min, and when started riding again issue reoccured within 5km.
In both cases the issue happened at speed of about 70km/h
As Neutral is a mechanical state, how is it possible for bike not to be able to roll with Neutral indicator on?

Have the chain and sprockets been replaced recently?

Conversely, do you truly know the condition of the chain and sprockets?

Also do you enough oil in the engine? Or any?

Has someone else done an oil change on it recently?

Verify your coolant level as well... at the radiator. Does it seem to run hot?
