Here is your answer as far as I'm concerned. "however I looked at the coolant and there was no coolant to be seen.."

Your bike was probably low on oil due to lack of maintenance, but it probably was registering on the dip stick before your ride or maybe not. Regardless it had oil but it didn't have any coolant. Classic overheat and melt down scenario but where did the coolant go? It was either eaten by the engine as the head gasket blew but this would result in rough running that you should have noticed prior to the meltdown. Or perhaps there was a leak somewhere else in the system. The oil mess was probably due to blowby and subsequent crancase venting as the piston rings lost compression. The oil would be pushed up into the airbox through the crankcase vent hoses. Have you looked in the airbox?

Honestly the engine sounds like a terminal case from what you have described and with used third gen bikes selling around $2K I can't see it making sense to rebuild it.

It's sounding more and more like you now have a parts bike ready for E-Bay. I hate to say it, but you may have killed it.
What is the sentence for Bike Murder in the 1st degree?

I wouldn't go as far to say a parts bike. The bike is in mint shape and I wouldn't take a perfectly good bike (aside from the engine of course) and sell it for parts, when I just purchased an engine out of a 97 VFR for $200 Canadian which is about $204 US ? .. and 3rd generation bikes don't range in value of 2K... more like 3k+ depending on the condition.. I thank you all for the help and heartache but I have my final answer and hopefully things will go smooth.

If you do find a donor bike to steal the engine from, BE SURE to use all the engine electronics from the donor bike. This seems to prevent some compatibly issues which seem to pop up during an engine swap.
