Some will rue the day if the roux burns and turns into Cajun Napalm. Roux is a flour fat mix. Some of the fancy French places in New Orleans use butter. The butter is clarified first. Country folks use oil, lard or gator tail fat. No rules making the stuff only when it looks right is it right.
All I know is the end product was AWESOME last night. Not many people can cook a really good roux (proper spelling). What's that got to do with VFR's? At least on VFR rider had it last night. ; )
