Really just a matter preference, what fits your budget, size & so on. Picked up a Cortech magnetic bag used for short money. Fellow VFR owner traded his bike for a Ducati Monster (plastic tank cover). Plenty of pockets, high quality zippers, rain cover, shoulder strap & clear map pouch. PO stated around $100 new, I think I paid $40.
    Excellent quality overall IMO

I'm partial to the RKA magnetic bags myself, but there are lots of good ones out there. Just pretty much boils down to personal preference.

As others have said. The only thing I would add is to make sure if it has a hook in the front that the hook will actually hook onto the tank. The one I have doesn't and while it's not serious, it is irritating.

I really like my GIVI tank lock system bags. I can share my bags between my VFRs and they never touch the tank so no worrying about scratching the paint, they go on and off real easy and there are quite a few options as far as size and fore/aft adjustability (on some bags). SW-Motech has a similar system and their mount even has a 12v pass through option allowing your bag to be able to charge your electronics via the mounting ring and an internal 12v plug adapter.

Nah, I make sure there's no gravel under there and wipe the dust off. It's a bike and it's designed to be ridden, it's not a trailer queen so it will end up with some scuffs and scratches. I ride it, keep it clean and waxed, and try to keep the unnecessary scratches and scuffs to a minimum. But I sure don't go to great lengths or fuss about it too much.
