I'm searching for some new mirrors for my ride. Any suggestions or succes with any aftermarket designs? OEM seem to be hard to come by as well.

Getting ready to adjust my valve clearance, any advice? Will I need new gaskets or just Honda bond?

If you can find the original mirrors, get them. Many replica mirrors use flat plate glass mirrors, which amplify the effect of vibration and show more glare at night. Originals are much better.
Valve adjustment? get out your manual. You don't want to mess this up.
If your valve cover gaskets have never been changed, take a close look at them. Are they getting crispy? Are the Cracking? If they are 20 years old, they could be due. Also, something that many don't consider; if the rubber gaskets around the valve cover bolts are old and compressed, if you replace the valve cover gasket and use the old bolt gaskets, the valve cover gasket may not be getting the squeeze it should. Replace those at the same time.
A light dose of Hondabond on the head in the half-moon cutouts is all that is needed for sealant.

I would go with a set of "condomless" mirrors from a 2002 VFR, they are much better and look the bomb.

I will send pix this weekend as I am out of town, but they do cover the holes/depressed area around the mirrors and use the stock rubber isolating gasket that goes between the mirror and the fairing. totally look the part and look stock

Do you know of any way to remove the oil pan without taking the exhaust off? Manual calls for it but not sure, it seems as if it could slide out of there with just a little extra room.

No, unfortunately, the exhaust has to come off. Inside the pan are some tubes, that go right down to the bottom, as well as the oil pump pickup. Clearance to the exhaust pipes would have to be like 3-4" which it isnt.

My 2002 vfr mirrors arrived today...they don't seem to fit over the stock mounting holes (90 VFR) (not enough width). Any suggestions on how to make this look better? I was thinking that they'd bolt right on but I can only mount them with one bolt.
