Depends on how much time you have. I travel between CO and MN/WI more frequent than I'd like. I80 will be a much more direct route and much more boring. Farm after farm and more frequent filling stations until you reach the last hour of Nebraska. Life will get a lot more interesting after that.

I90 will take you a few hours further north which would be much less direct. However, you have wide open spaces as far as the eye can see all the way across South Dakota. Then you hit the Black Hills, Mt. Rushmore, then there's Devils Tower an hour over the border in Wyoming. Lots more wide open spaces across WY. Take state highways thru Yellowstone until you hit I15 south in Idaho. That would bring you back down to Salt Lake City Utah and back on track. That route would probably add an extra day to your trip but you'd never see a wider variety of breathtaking scenery in your life.

Hmm, that BBQ tool gives me an idea...

I need to rake the yard...

I need to come up with the menu again. I am thinking meat, beans, beer, bread. Chips and salsa. Do we need anything else?

Could you add beer, lager and ale with that? Maybe some amber nectar as well. Hopp juice would be a nice touch.
