Hi. I've been screwing up the energy to pop the valve covers and check/adjust the valve clearance on my '85 vf500f. I can't find any gaskets..... It doesn't leak any oil now, and I rather not have it start. What do people do about the gaskets? Can I just seal it with the old gaskets and expect it not to leak?

No problem re-using gaskets unless they've gotten hard and cracked. Be sure to use the 2-feeler method when checking clearances.
