On my VF1000F I currently have the stock sprockets 17/43t. I would like to drop it down a tooth or two to give her a little more low end pep. If I can round up a rear off the VF1000R 44t that would give me one. Are there any other honda or any make of front sprocket that would on my old interceptor so I could get to 16t?

Don't bother, you won't notice a difference except higher revs. In fact, I've found going the other way actually is better. It sounds counter intuitive but when you consider that the VF's biggest strength is it's midrange then it will make sense to make the most of it.
